When Michael Schwartz gives you his perfect pizza dough, let’s you form the dough into the base of a pizza, top it with your self-selected toppings and cook it for the precise amount of time needed in the perfect pizza oven, I say go for it! And I did, as a guest at one of his monthly pizza making parties at Harry’s Pizzeria in Miami Beach.
These pizza making parties happen the last Wednesday of every month at Harry’s.
Walk into the restaurant, sit at a family-style table (our table had some fun guests), enjoy an aperol spritz and a best-in-class meatball and arancini.
Michael provides a little pizza making history and some instructions. It’s all about the dough!
The staff delivers each mound of perfected dough (a little honey! A little beer! Not too cold. Not too warm). Then jump into the pizza-constructing experience. Michael works the room, sharing helpful hints, as you push, pull and toss the dough (Use your knuckles to stretch it.).
I added some mozzarella, parmesan, a little pepperoni (“not too much” Michael warns, “less is more when it comes to toppings! When you load up the toppings, the pizza is hard to cook and hard to eat.”) a dabble of yellow tomatoes and fresh basil.
Each table is called, one at a time, to surrender their pizzas to the chefs who place the pizza in the very hot oven. Five minutes later, your pizza is delivered to your table. While you wait that interminable 5 minutes, you get a salad and wine flows.


Everyone I saw walked out smiling and carrying to-go bags.
And I walked out as the raffle winner: a $50 gift certificate to return to Harry’s.
